Cook the potatoes until tender. Steam the beans al dente. Boil the eggs and remove the peel. Cut them into four parts. Cut the smoked bacon without rind or cartilage into cubes. Fry them in a pan with some butter. Add a shredded shallot after a few minutes and if it has turned glassy, add the beans. Season with a few twists from the pepper mill and a dash of vinegar. Make a vinaigrette of mustard, cider vinegar and olive oil. Season with some pepper from the mill and a pinch of salt. Cut the cooked potatoes into slices and mix with the beans, the bacon and chopped parsley. Drizzle with vinaigrette. Finish the dish with the eggs.
