Put the fish steaks in a baking dish and sprinckle with olive oil and season with salt, pepper and dried dill. Let them bake, depending on the thickness of the pieces, between 15 and 30 minutes in a pre-heated oven at 110°C. Left on the dinner plate, a fennel puree. Cut the fennel into strips and blanch them. Drain and fry in a pan with butter and chopped shallots. Puree and season to taste. Right in the picture a puree of sweet potatoes. Peel and boil them until tender. Sauté chopped onion and garlic in butter until onion turns almost. Mix both preparations in the blender with a little chicken broth. Season with nutmeg, salt and pepper. Above on the dinner plate: fried spinach with coarse sea salt. On top of the fish: a tuft leek shoots with potato waffles. Cut a small potato with the mandolin in chips with a diamond shape and fry for in the fryer as normal fries.
