Ardennes way

Fry the bacon ripped in small strips, add sliced mushrooms, chopped parsley, chopped garlic and chopped shallots. Deglace with white wine. Add cream. Season with thyme, salt and pepper and a dash of lemon juice. Bind the sauce, if desired. Roll the trout in flour. Bake in an oval pan over butter and season with salt and pepper. Serve the trout with the sauce and accompanied by boiled potatoes in the peel.
