Make the red cabbage with apples: cut the red cabbage into fine strips and blanch 10 minutes. Sauté the chopped onion. Add the red cabbage in a casserolle with red wine, onion and spices. Add sugar and simmer for at least 1 hour. Cut the apples into small cubes. Add after half an hour the apples to the red cabbage. Season to taste with currant jelly and balsamic vinegar. Make the potatoes mash: opt for mushy potatoes and boil them peeled and halved 20 minutes. Drain and crush with the potato masher. Add butter, salt, pepper and nutmeg to taste. Stir well and add 1 to 2 egg yolks. Mix cream with the mash until it reaches the desired thickness. Bake the sausages in butter until golden brown.
