Cut the cauliflower into florets and cook for 10 minutes in water. Make a roux, dilute with milk. Add mustard and grated cheddar and grated Parmesan. Season with salt and pepper. Let it cook no more. Place the cauliflower florets in a greased baking dish and cover with cheese sauce. Finish with a layer of grated cheddar, Parmesan and breadcrumbs. Put 25 minutes in an oven preheated on 185°C and a few minutes under the grill until browned.
