Cook the dessert rice according to the instructions on the packaging but in milk with the addition of a bag of saffron. The pudding: boil 25 cl of milk with the split vanilla pod. Beat 1 egg, 2 egg yolks and 100g sugar until foamy. Add 30g flour and vanilla sugar. Pour in the half of the hot milk. Mix well and pour the remaining milk. Keep stirring, until you get the pudding. Whip the cream semi-solid. Stir the pudding under the rice and dilute with some semi- whipped cream. Allow the rice pudding to cool and serve with brown sugar.
